The pan does most of the work. Your job is to leave it alone.
For two
- 2 steaks, about 1 inch thick
- 1 tbsp neutral oil
- 1 tbsp butter, 2 garlic cloves and a few sprigs of thyme
- Salt and pepper
Method
- Take the steaks out of the fridge 30 minutes before cooking. Pat them dry and salt them.
- Preheat The Pan over medium-high heat for three minutes, then add the oil.
- Lay the steaks down and leave them for three minutes. They lift easily once the crust has formed.
- Turn them, add the butter, garlic and thyme, and spoon the butter over for two to three minutes.
- Let them rest for five minutes before slicing.
