What's in the box

The braiser. If you choose “With glass lid”, the matching glass lid comes in the same box.

Construction

A titanium cooking surface over an aluminum core, with a stainless steel base. There's no coating anywhere in the pan, so there's nothing to scratch, flake or wear thin.

Care

Wash with warm water and a soft sponge, then dry. For stuck-on bits, soak for a few minutes and use a pan scrubber. Dishwasher safe.

Shipping & returns

Free shipping on every order to the US, Canada, the UK, Australia and New Zealand. Delivery takes 7 to 12 business days.

Warranty

2 years against manufacturing defects, from the day your order is delivered. Normal wear, misuse and accidental damage aren't covered. Write to us with your order number and a photo, and we'll repair, replace or refund the piece.

Every promise, with its proof.

01No coating to wear off

Nothing to scratch, flake or wear off.

A nonstick pan is slippery because of a thin layer on top, and that layer wears down a little every time you cook. The Braiser has no layer. You cook on the titanium itself.

Bare metalThe Braiser: nothing on top

02Food lets go

It browns, then lets go.

Preheat for 1 to 2 minutes on medium heat, add a little oil, lay the egg down and let it set. One flick of the wrist and it slides. Food grips smooth metal harder than a textured surface, so the dimples touch less of your food.

Technical University of Denmark, Journal of Food Engineering, 2011.

03High heat

Turn the heat up.

Coated pans come with a rule: low to medium heat, to protect the coating. With no coating to protect, you preheat on medium-high and lay the steak down. It hisses on contact and turns over onto a deep golden crust.

Look closer

Every detail does a job.

Here’s what each part of the braiser is there to do.

  1. Thousands of shallow dimples hold a thin film of oil. Less of your food touches the metal, so it browns, then releases.

  2. An aluminum core sits between the titanium and the steel base. It carries heat from the center out to the rim.

  3. There's no nonstick layer to scratch, flake or peel. You cook on the titanium itself.

  4. Two short handles, riveted in place, so you can carry it from the stove to the table.

The material

What’s under the surface.

Three metals, bonded into one body. Each one has a job, and none of them is a coating, so there's nothing to wear thin.

  • The cooking surfaceTitanium

The only metal your food touches. There's no coating to scratch, flake or wear off, so metal spatulas are fine.

  • The coreAluminum

Carries heat from the center out to the edge, so the whole pan cooks at the same pace.

  • The baseStainless steel

Makes the pan induction-ready, and it works just as well on gas, electric and ceramic.

Questions

Before you cook.

Is there any PTFE or PFOA?

No. There's no nonstick coating, so there's no PTFE and no PFOA. It's also made without lead or cadmium. You cook directly on titanium.

Can it go in the oven?

Yes, up to 500°F (260°C). Both handles are steel, so the braiser goes from the stovetop into the oven. The handles get hot: use oven mitts.

Can I use metal utensils?

Yes. There's no coating to scratch, so metal spatulas, whisks and tongs are fine. The hammered titanium may pick up light marks over time; they don't change how it cooks.

Does it work on induction?

Yes. The stainless steel base works on induction, gas, electric and ceramic cooktops.

Will food stick?

It can, if the pan is cold. Preheat, add a little oil, and give food a moment to release. After a few meals, it becomes second nature.

Is it dishwasher safe?

Yes. Washing by hand with warm water keeps it looking its best.

Is there a warranty?

Yes. Every piece is covered against manufacturing defects for 2 years from the day it's delivered. Normal wear, misuse and accidental damage aren't covered. If something isn't right, write to us and we'll sort it out.

Where is it made?

Our cookware is made in China by a specialist cookware manufacturer. Every piece is labeled with its country of origin.
